The future of our winery is in our vineyards. The family’s future is in the third generation of Trefethens, for whom this wine is named—Hailey and Lorenzo. HāLo is sourced entirely from our Hillspring Vineyard, where shallow, rocky soils, coupled with a climate protected from fog and wind, allow us to grow truly exceptional Cabernet Sauvignon.
Concentrated aromas of Bing cherry, plum and blackberry are layered with earthy notes of molasses and tobacco. Rich flavours of plum and berry carry through on the palate and are enhanced by hints of black pepper, leading to a long and powerful finish.
This wine would greatly complement a creamy cheese like brie and plays well with black pepper spice. Winery Chef Chris Kennedy recommends pairing with Cacio e Pepe or our Wild Arugula Pesto recipe.
