Gamay noir à jus blanc has been the unique grape variety in Beaujolais since the beginning of the 17th century. This grape variety has been able to accompany the evolutions of the vineyard and collective cultural traditions. And it is indeed on the clay-limestone soils and the granite soils of Beaujolais that the plant has found its soil of predilection.
