Fabienne Bony et Eva Gachot
Our seven-hectare family winery was created in the 60s by Jean-Pierre BONY. Fabienne BONY has been growing it since the 2000s by expanding the production area and diversifying the appellations. Since March 2023, Eva GACHOT, his daughter, has arrived on the estate to lend him a hand.
We produce 85% of red wines from the Pinot Noir grape variety. For our white wines, we mainly use Chardonnay but we also have Aligotés. The vines are cultivated with respect for the land and the wines are aged in the noblest Burgundian tradition.
We work with maximum respect for our vines while paying attention to the environment around us. We have started a process to reduce phytosanitary treatments. We obtained the Level 3 High Environmental Value (HVE) Certification in 2021 and we have started a conversion to Organic Farming.
Similarly in the cellar, we take care to create wines that naturally reflect the terroir, climate and vintage, while taking into account the influence of the moon.
